Comprised of the lean First Cut and marbled Second Cut, you'll have something for everyone with this classic braising roast. This brisket is perfectly-trimmed for your Dutch oven or roasting pan; we don't recommend smoking it since we've removed all of the protective layer of fat that bastes the roast during smoking. But seared over high heat, nestled into a dish with onions, garlic, red wine, some brown sugar or tomato paste if you like, you'll have yourself a classic holiday main dish in a matter of hours. There's a reason brisket is synonymous with holidays and Shabbat; you can cook it ahead and then reheat to keep it warm, making it easy to bring a hot dish to the table no matter what time the holiday starts.
