This hulky shoulder roast has more aliases than a secret agent: Colorado, California, brick, book, square. At Marble & Grain, we call it the French Roast, 4½ to 6½ pounds of Black Angus beef raised on grass, finished on grain for maximum marbling and, like all the meat we sell at KOSH, butchered according to Kosher law. Though lean, this USDA Prime French roast is full of rich, pasture-raised beef flavor and surprisingly versatile. As the name implies, it’s ideal for roasting whole — rubbed with garlic and black pepper, a Kosher French roast for Passover is always a crowd-pleaser — but you can also cube it down for grilled kebabs, braised beef stew, and other Kosher French roast recipes.
